Morwen Tindomerel writes a decent AU series with Kenobi and Jinn spawn and Jedi Youngling!Han Solo. Yeah, it sunds trite, and it's not the most original in truth, but she's good at getting into the characters.

NatzandtheRatz did Rats Wars and the RW Diaries. The diaries are the complete version, but they're not as detailed and harder to get into because of the Bobba Fett accent.

A Day in the Life of Wembly: Evil Sith Lord. It's crackfic. Almighty Ishboo had an even more crack-filled crackfic up, but it was script format with emoticons. I make no apologies. It's funny crackfic.

Like Fire and Ice Me? A shameless H/L shipper? Yes, ma'am.

So, so far I haven't found anything to rival my favorite LotR pieces, but trust me, it's better than Eddingsfic.
